FRENCH ONION SOUP

Soupe A L'Oignon 

We make ours without wine.
Vegetarian and Omnivore broth-based versions.

French Onion Soup: Welcome

Melty Gruyere cheese, rich mushroom or beef broth, caramelized onions, and a crusty piece of bread all merge together to make for one of our favorite Apres Ski Meals. We prepare the stock & onions at home. Adding the bread and loading up the cheese onto the premade soup is quick and easy when serving up. We have dedicated oven-safe soup bowls to do so all together under the broiler. It can also be made using a cookie sheet, broiling the cheese on slices of bread then top it on the individual servings.

One secret to this delicious French Onion Soup is the slow-cooking of the onions to golden soft. Do not crisp or burn. 

​

The traditional recipe uses homemade stock. A busy work week does not always allow me the time thus, this recipe with good boxed broth is the formula I use to prepare my ski lodge-friendly French Onion Soup before heading to the mountains.

RECIPE:

INGREDIENTS:

  • 5-6  sweet onions, depending on size, 

  • 3 cloves garlic, sliced & chopped

  • 4 cups broth

    * Homemade Beef Broth

           or

    * Organic boxed beef broth

           or

    * I use mushroom broth for a vegetarian option

  • 1 tbs Worcestershire sauce

  • 2 Tbs flour

  • 3 tbs butter

  • 1 tbs olive oil

  • 1 tsp salt

  • Shake of fresh ground pepper

  • Sliced baguette

  • 1 cup grated Gruyere (or other good quality authentic Swiss cheese)

DIRECTIONS:

  • Peel and slice the onions, I like them in chunky strips

  • Rough chop garlic in small bits

  • Melt butter in the saute pan

  • Add onions to the pan

  • Add olive oil

  • Sprinkle with salt

         the broth is salty, adjust salt to personal preference​

  • Cover and cook on low for approximately 20 minutes stirring occasionally

  • Add in flour, stir, then add broth

​

Optional, add fresh thyme ( I have a giant thyme plant and put it in everything)

​

  • Cover and heat for 20 more minutes

​

  • Up to this point, you can make it at home. Cool and transport to reheat. 

  • Recommended storage: 3 days fridge, 6 months freezer.

  • Toast baguette slices 

​

A: If you have the proper broiler SAFE crocks for French onion:

    Ladle soup into oven-safe crocks. Place toasted baguettes on the soup, cover with grated cheese and broil for 2-4 minutes. Place crocks on a cookie sheet while in the oven to minimize mess.


B: No crocks:

    Toast the cheese on the baguette slices on a cookie sheet. Top on heated soup in individual bowls
